Diane Fresquez is an American journalist and the author of A Taste of Molecules: In Search of the Secrets of Flavour. For many years, Diane was also a special correspondent for the Wall Street Journal Europe.
In her book, Diane explores the lives of food scientists working to discover the secrets of flavour: from one of Belgium's few female brewery owners, to a food and mood expert at the research centre, the Restaurant of the Future, Wageningen University, the Netherlands.
In this talk, Diane will be exploring the essence of comfort and surprise in the things we eat. Can comfort food ever involve surprising flavours, or should our experience of eating comfort food always be familiar and safe? Or do we want our food to continually surprise us and how far are we prepared to go when it comes to experiencing surprising flavours in our food?
